A Quick Side Dish

Here goes, these are the ingredients you will need:

1 8oz can of tomato sauce
1 ½ cups of uncooked rice
1 small tomato diced
1/2 of a small onion diced
1/3 of a small bell pepper diced
few sprigs of cilantro chopped
1 container of Knorr chicken stock concentrate
3/4 tablespoon of minced garlic
1/2 tablespoon of ground cumin
1/2 tablespoon of ground black pepper
1-2 tablespoons of cooking oil
3 cups of hot water

Start by putting the oil into a heated pan (medium high heat will work best) pour in the rice and brown until the rice is lightly toasted.

While the rice is toasting chop the veggies.

Dump the veggies and garlic into the rice, stir then add the spices, and stir again.

Add the four cups of hot water and about 2/3 of the can of tomato sauce, stir.

Bring to a boil. Cover, turn down the heat to medium-low, and cook for 20 min. (it may be best to periodically check on the rice and stir to prevent sticking to the bottom)

After 20 minutes, uncover, fluff the rice and serve as a side to any of your favorite Mexican dishes:)
I did not have all ingredients on hand (i.e. bell pepper and cilantro) but it comes out just as well without them:)

What Am I Getting Myself Into

As if being a working single mom of three doesn't keep me busy enough, I have decided to do something I have wanted and tried to do for the last eight years. My attempts over the last eight years were unsuccessful for many reasons, mostly because I think I lacked the confidence in myself to fulfill my goal.

Are you chomping at the bit, sitting on the edge of your seat, just giddy with anticipation???

I am going back to school - FULL.TIME!! And working 50+ hours a week at work, football season is about to kick off for the boys next month and Jenna is *almost* old enough for dance classes.

We will be BUSY to say the least. In the grand scheme of things finishing my degree will be a step in the right direction for our little family.

Please pray for my sanity!!!
